Great idea for low-cost roasting, it approach were attracted me to join into roasting family more earlier. _________________ ????

The temperature data recoeded from a moving thermometer is not as reliable as a stationary thermometer. But it's not easy to install a stationary thermometer on a metal bowl as the flame and the stirrer might destroy the wire and the sensor.
Just my two cents. |

This is the point I'm concerning of.
If the stirrer and the thermostat are embedded and stirred around the beans all the time, then the record from a moving thermometer is still reliable. |

I think
the accuracy is less important, but the repeatability is more important.
A moving thermometer will measure different points of the bowl during roasting. As it is done by hand, the repeatability tends to be low.
For example,
In a 1st roast, it measured point A at 1 min, point B at 2 min, point C at 3 min...
In a 2nd roast, assume all factors are same except the stirring action, it measured point C at 1 min, point A at 2 min, point B at 3 min...
Except the whole heat distribution of the bowl is truly constant at all single point of time, otherwise the temperature record at point A at 1 min in 1st roast may be different than the record at point C at 1min in 2nd roast, even all the factors are same. The temperature curves will vary and less referable.
A stationary thermometer will measure a fixed point all the time. The point may not reflect the true temperature of the beans, but it should record the same temperature in all the cases if all the factors are constant. The repeatability help to maintain the quality of the roast.
